Street Kitchen – Zé’s Italian style tomato soup

In partnership with the portal Street Kitchen, Hírország provides English translations for some of the most exquisite recipes. The portal Street Kitchen was created by the Hungarian gastronomy expert, Zé Fördős and his brother, Peti. Zé fell in love with gastronomy at the age of five, when his grandparents showed him the kitchen of their restaurant, Alba Régia. Between the ages of eight and nine, Zé wrote his first cookbook, containing simple recipes. He acquired a degree in Gastronomy Management at Budapest Business School and has published several cookbooks since childhood. His portal contains recipes of the most brutal and hearty meals. 

You will feel in Italy after tasting this soup made of wonderful cherry tomatoes. You do not have to add any sugar, which means it is super healthy as well.

Ingredients for 4 people:

  • 80 ml olive oil
  • 1 brown onion
  • 500 g cherry tomatoes
  • 1 clove of garlic
  • Salt and pepper
  • 1 twig of fresh rosemary (or 1 pinch of dried rosemary)
  • 150 g Parmesan cheese
  • 2 handfuls of Farfalle pasta
  • 3-4 leaves of fresh basil (or 1 pinch of dried basil)

Preparation:

1. Heat up 50 ml olive oil in a cooking pan and sauté the finely chopped onion.

2. Cut the tomatoes into halves and add them to the onion. Fry and stir until they collapse. Let the liquid evaporate.

3. When the tomatoes have turned into a sauce, slice the clove of garlic thinly and mash it with the tip of the knife. This adds an intensive garlic flavour to the soup without whole garlic pieces.

4. Add some salt, pepper and rosemary.

5. Grate and add one-third of the Parmesan. In case you have the skin of the cheese too, it is worth adding it to the soup.

6. Once our tomato ragout has become thick, add half a litre of water and boil for 10 minutes.

7. Add the pasta and some fresh basil.

8. Cook until the pasta becomes soft. You can add some sugar, salt or pepper if you like.

9. Add some more grated Parmesan.

10. Add 30 ml olive oil and serve with the rest of grated Parmesan.
